Brain wood is the hardest and most resistant surface that wood has to offer. The production of such a cutting board is more complex but the work is worthwhile. The advantage of this cutting board is that the brain wood side points upwards, which is particularly gentle on the knife and produces a beautiful pattern. Since the wood fibers run vertically instead of horizontally, they are not injured during cutting, but only displaced. After a short time, they straighten up again and close, creating a smooth surface again. This is what makes them so special.
